Strawberry and banana muffins

An excellent recipe for bananas that have been hanging around and with the fresh strawberries these are absolutely delicious.
115g butter, melted
120g vanilla yoghurt
1 tsp vanilla extract
2 large bananas, mashed
250g strawberries, stems removed and chopped
140g self raising flour
150g light brown sugar
1 ½ tsp baking powder
¼ tsp bicarbonate of soda
½ tsp cinnamon
½ tsp salt
Preheat the oven to 180°C / 350°F / Gas mark 4.
Line a muffin tin with paper liners.
Melt the butter and set it aside until it cools down to room temperature.
Stir together the yoghurt, bananas and the vanilla extract.
Add the butter when it is completely cool.
In a large bowl mix together the dry ingredients from flour to salt.
Add in the berries also at this point.
Coat well with the flour mixture.
Add the wet ingredients to the dry ingredients and stir until just combined.
Fill each muffin case using a spoon.
Bake for about 20-25 minutes or until a toothpick inserted in the centre comes out clean.
Remove the pan from the oven and place it on a wire rack for the muffins to cool for 10 minutes.
