Baby chicken stock

1 chicken carcass
1 onion, peeled and quartered
1 carrot, peeled and diced
1 stick celery, sliced
2 litres cold water
Put all the ingredients into a saucepan, bring to the boil then lower the heat, cover and simmer for 2 hours
Strain the stock into a bowl/jug, cover and leave to cool. Store in the fridge and use within 24hours or freeze portions for use at a later date.
