Almond paste

This almond paste can be used in a variety of cake recipes.
200g ground almonds
90g caster sugar
90g icing sugar, sieved
1 tsp almond essence
1 large egg
Combine your ground almonds, caster sugar and icing sugar together in a large bowl.
In a separate bowl beat your egg and add your almond essence. Mix together well.
Add your egg mixture to your dry ingredients and combine until they form a stiff paste.
Turn onto a hard surface and knead until smooth.
Roll into a round shape and store in clingfilm until ready to use.
